Crispy battered chicken coated in a beaut bang bang sauce with sticky fried rice 😮‍💨 Macros 447 calories 44gP / 4F / 66gC Serves: 2 Shopping list ✍️ - 300g Chicken Breast, diced - 1 tsp soy sauce - 1 garlic clove, minced - 1 inch ginger, minced - 25g Cornflour - 220g Microwave Rice - 1 tsp dark soy sauce - 2 tbsp reduced sugar sweet chilli sauce - 1 carrot, grated - 100g frozen peas - 1 Spring onion, sliced Bang bang sauce 🥣: 1 tsp soy sauce, 1 tbsp sweet chilli sauce, 3 tbsp light mayo, 1 tsp siracha & 1 tsp water. Method Mix the sauce ingredients together and set aside. Add 1 tsp soy sauce, minced garlic & ginger to the diced chicken then coat in cornflour. Spray with low calorie spray and air fry on 190C for 14 mins turning half way and spraying with more low calorie spray. In a large bowl mix the microwave rice with the grated carrot and peas, then pour over the dark soy and sweet chilli sauce. Mix well then air fry on 200C for 5 mins, give it a good stir half way. If you’re frying in batches you might go a little over 30 mins, so forgive my sins in advance. If you’d rather bake I’ve added instructions on the blog post! Enjoy 😄 Chris x CRISPY HOT HONEY FETA CHICKEN | Serves 4 INGREDIENTS 1/3 cup / 110g Honey 1 1/2 tsp Hot Sauce (I like Frank’s or Cholula) 3/4 tsp Chilli Flakes 2x 250g/9oz Chicken Breasts 2 tsp Paprika 1 tsp Salt 1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper 1/4 tsp Cayenne Pepper 35g/1/4 cup Plain Flour 2 Eggs, beaten 65g/1 cup Panko Breadcrumbs Veg Oil, as needed (6-8 tbsp) 200g/7oz Feta, crumbled METHOD 1️⃣Combine honey, hot sauce & chilli flakes in a bowl & warm in the microwave (20 secs or so). Stir then leave to cool. You can also do this on the stove in a small pot (just bring to a simmer then remove and cool). You can easily adjust the heat with chilli flakes/hot sauce if desired. 2️⃣Horizontally slice the chicken breasts right through the centre to create 4 even-sized breasts. In a small pot or bowl combine the paprika, salt, onion powder, garlic powder, oregano, cayenne & black pepper. 3️⃣Line up 3 large shallow dishes & place a large tray at the end. 1st = flour + 1/2 seasoning, 2nd = beaten egg, 3rd = Panko + rest of the seasoning. One by one dredge the chicken through flour, egg then Panko then place on tray. Thoroughly coat at each stage (namely the breadcrumbs). 4️⃣Add enough oil to coat the base of a large pan & place it over medium-high heat. Once the oil is hot enough that a breadcrumb rapidly sizzles, place in the chicken (if you can’t fit 4 pieces then work in 2 batches, top up the oil in between if needed). Fry for 3-4mins each side or until deep golden on the outside & white/piping hot through the centre. Place on a wire rack above the tray. 5️⃣Cover chicken in feta, then place under the grill on high until it starts turning golden.
