A recipe for chicharron de ribeye in tacos. I ate these ribeye tacos in Hermosillo, Sonora, and just had to recreate them at home with venison. They’re indulgent, crispy, chewy, meaty bits of awesome. This style of ribeye tacos is a specialty of a fantastic taqueria in Hermosillo, Sonora, called Tacos de Armando. As you might expect in Sonora, which is a gigantic temple of beef, there are all sorts of variations on beef tacos there. | @huntgathercook Wild Game Recipes, Taco Recipes, Wild Game Dinner, Venison Backstrap, Grilled Ribeye Steak, Breakfast Recipes, Dinner Recipes, Best Comfort Food

This is a classic French mushroom sauce for steak that you can manipulate depending on what sort of mushrooms, as well as steak, you happen to have on hand. Whichever route you go, this is classically French. Lots of butter, shallots, a splash of brandy or Madeira or Marsala, a pinch of thyme, and parsley or chervil at the end. | @huntgathercook #hankshaw #frenchmushroomsauce #steaksauce #mushroomrecipes #foraging Steak And Mushrooms, Stuffed Mushrooms, Stuffed Peppers, Mushroom Sauce, Mushroom Recipes, Elk Steak, Beef Filet, Brown Sauce

I didn’t grow up in the Taquito Belt, which, in America, runs from about Houston along Interstate 10 along into Southern California. South of the border, taquitos are called tacos dorados, or golden tacos. Put two tortillas together and you have a flauta. Whatever you call them, tacos dorados are easy, delicious and versatile. You can serve them as a snack, an appetizer, or as a main meal. In Texas we ate them for breakfast constantly.. | @huntgathercook Venison Recipes, Chicken Recipes, Ethnic Recipes, Dove Recipes, Southwest Recipes, Taquitos Recipe

Nopales tacos are a thing in Mexico, as well as here in the United States. Nopales are the tender young cactus paddles from the prickly pear, and in these tacos, I’m serving them as carne con nopales, a thick stew of meat, chiles and cactus. It’s a great way to get to know this crunchy, tart and nutritious vegetable. | @huntgathercook Thick Stew, Red Chile Sauce, Homemade Corn Tortillas, Ground Venison

Asado de puerco, or asado de boda, is a classic of Northern Mexico. Rich chiles that aren’t too hot, lots of pork and some super cool spices make up this dish. Asado de puerco exists all over the northern part of Mexico and has lots of interpretations, depending on where you are, and who’s cooking it. The recipe is slightly different in Nuevo Leon from Sonora, and it changes in Durango and Chihuahua, too. | @huntgathercook Wild Boar Recipes, Cooking Recipes, Wild Food

Tacos al carbon are just carne asada tacos cooked over charcoal, and these Sonoran-style tacos, made with beef or venison, are perfect for a backyard barbecue. Both terms are used interchangeably, but tacos al carbon must be cooked over wood or charcoal, while carne asada tacos are often cooked on a comal or griddle indoors. The best carne asada tacos, however, are cooked over real fire. | @huntgathercook Tacos Al Carbon, Mexican Sour Cream, Asada Tacos, Hot Salsa

Smoked venison roast sounds like it should be awful, but when you smoke venison just to doneness, medium-rare or medium, it can be an amazing cut of meat, both for dinners and for lunches with the leftovers. if you’re used to smoking pork, you’ll need to change your perspective. Smoked, pulled pork, gently cooked for many hours until it falls apart is one of the great things about being alive. | @huntgathercook Smoked Venison Roast Recipe, Best Roast Beef, Smoked Pork, Ham Recipes, Roast Recipes

Typical bratwurst recipes make a light colored sausage, like the classic Sheboygan bratwurst recipe I make with pork or turkey. But for venison bratwurst, I want a darker, smokier link. That means red brats. What is a red brat? It’s apparently unique to Madison, Wisconsin. Red brats are smoky and addicting. Venison summer sausage comes in many forms, from the faux fermented versions you see from many butchers, to this real-deal, old school version that hails from Holland. This venison summer sausage is called boerenmetworst, literally “farmer’s dry sausage,” and it is a proper summer sausage from the Old Country. You make the links, let them ferment for a few days, then smoke them very gently—you don’t want them to cook. Then you hang them to dry for a few weeks before eating. | @huntgathercook Best Venison Summer Sausage Recipe, Sausage Jerky Recipe, Summer Sausage Recipes, Homemade Sausage, Jerky Recipes

Along with the hot dog, Louisiana andouille sausages are quintessentially American. Here’s a traditional recipe for making them at home. And like the hot dog, andouille sausage too owes at least part of its origins to Germans, even though with a French name it sounds counterintuitive. So far as I can tell, Louisiana-style andouille sausages are a product of early German immigration — and when I mean early I mean the 1750s, when Louisiana was part of France. | @huntgathercook Andouille Sausage Recipes, Homemade Sausage Recipes, Sausage Links

Smoked venison jerky may well be the finest expression of this type of food. Lean, meaty, smoky, chewy and a little spicy, this is the Platonic Ideal of jerky. Here’s how to make it yourself. For starters, this is a regular, i.e., not ground meat, extruded venison jerky — my ground venison jerky recipe is here — and it is a dry cured jerky, not a brine-based one like my chipotle jerky. | @huntgathercook Deer Recipes Venison, Venison Jerky Recipe, Smoked Beef Jerky, Beef Jerky Recipes, Smoker Recipes, Dehydrated Vegetables, Dehydrated Fruit, Other Recipes

Why yes, this is a recipe for head cheese. But don’t you think the French fromage de tete sounds sooo much better? A few years back I wrote about the Italian version of this lovely luncheon meat, coppa di testa. I love that recipe, but it requires an expensive beef casing to make, which you can only get mail order. I knew then that the easier way to make head cheese is to put it in a loaf pan. | @huntgathercook Recipe For Head Cheese, Terrine Recipes

Smoked venison backstrap is something you need in your life. Sliced thin and served in a sandwich, or as-is with any number of sauces — or au natural — this is one of my favorite ways to celebrate a successful hunt. First thing to remember is that you don’t smoke venison the way you smoke pork.
