I love chia pudding because its full of fiber and healthy fats, but I always forget to make it in advance (it usually takes a few hours to set).  I found out that if you add hot water to the chia seeds, they instantly gel up - then just stir in greek yogurt and add your favorite toppings! 😋  Ingredients: - 2 tbsp chia seeds - 1/4 cup hot water - 3/4 cup greek yogurt (or dairy free yogurt) you can use plain or flavored! - 1 tsp honey or sweetener of your choice (if you are using unsweetened yogurt) - Topping ideas: berries, sliced banana, fresh fruit, granola, coconut flakes, almond butter, etc!
