Grilled delicata squash

Our parmesan roasted delicata squash is buttery, nutty, and sweet. We love this recipe so much. It’s easy enough for tonight and works well as a holiday side!

Delicata squash is actually named for its delicate, edible skin. Half-inch slices grill up quickly, and the lovely caramelization enhances the flavor.

Delicata Squash Gruyère Gratin... three of my favorite things. This gratin is an indulgence. The sweet, creamy delicata squash melts into the creamy, nutty backdrop of Gruyère cheese punctuated by hints of thyme and sage.
