  • 1 handful Basil, Fresh Leaves

  • 1 tsp Salt

5 · Für einen perfekten Pizzateig braucht es eigentlich nur wenige Dinge. Und zwar: Mehl, Wasser, Hefe und Salz. In manchen italienischen Regionen nimmt man für den Pizzateig etwas weniger Wasser, gibt dafür dann aber etwas guten Weißwein zu. Du solltest den Teig für deine Pizza am Vortag vorbereiten und für ca. 10 Stunden im Kühlschrank gehen lassen, dann wird er besonders feinporig. Übrigens: Wer keinen eigenen Outdoor Pizzaofen hat, nutzt wie ich zum backen einen Pizzastein Eine tolle Sache…


  • 500 g Mehl Typ 00 (alternativ Typ 405)
  • ca. 325 ml Wasser mit Zimmertemperatur
  • 2 g frische Hefe (oder 1 g Trockenhefe), ja – so „wenig“!
  • 15 g feines Meersalz
  • 2 x Büffelmozzarella a 125 g (wer ihn nicht mag, kann auch „normalen“ Mozzarella nehmen)
  • Tomaten (Cherrytomaten)
  • Sardellenfilets (Anchovis)
  • grüne oder schwarze Oliven
  • rote Peperoncini
  • Knoblauch, frisch
  • Thymian, frisch
  • bestes Olivenöl
