Catherine Pla on Instagram: "Mini Berry Tarts. These impressive-looking tarts are delicious, but actually pretty easy to put together: blind bake the pastry crust, fill it with pastry cream, top with fruit. I’ll show you how to make pastry cream in a reel very soon. Makes about 6 4-inch tarts.

½ recipe tart dough (recipe below)
1 c pastry cream 
2 c fresh berries (strawberries, blueberries, raspberries, blackberries)
3 T apricot jam or marmalade

If not already made, prepare pastry cream and tart dough and refrigerate.

Preheat the oven to 375 degrees.

Roll out dough on a floured surface. Cut out 5” circles for 4” tart pans. Place dough circles into tart pans with removable bottoms and press into bottoms and up the sides. Prick bottoms with a fork.
