Sima 4/9: Add the yeast
Add a quarter teaspoon of yeast, or an equivalent amount of dry active yeast (I usually use fresh). It's a good idea to take a cup of the sima, mix the yeast evenly in that, let it start fermenting and then mix back into the bucket. Here I just crumpled the yeast in my hand and dropped it in. That works, too. Then leave the bucket open in room temperature overnight.
