In a large oven-safe skillet over medium-high heat, sauté any mix of veggies with oil spray (I used mushrooms, spinach & garlic). In a bowl, whisk together 4 whole eggs, 6 egg whites, 1/3 cup parmesan cheese, salt & pepper. Pour egg mixture over sautéed veggies & cook for 2 mins. Place pan in oven & cook for 10-15 minutes, or until eggs are set & puffed. Dinner is done!
