Take 2 jacket potatoes, use a fork to carefully put holes in them and coat in olive oil and a sprinkle of sea salt. Bake in the oven for 1 hour at 180 degrees Celsius. When cooked cut down the middle, but be careful not to cut in half, leave the two sides attached. Gently scoop out the insides of both and add to a bowl. Add a dollop of vegan cream cheese (roughly 2 tbsp), grated vegan cheese and splashes of milk until the mash is really smooth and creamy, then add chopped parsley, dill and chives. Put the mash back inside the potato skins and roast again for 30 minutes. Meanwhile make your tempeh bacon pieces by chopping tempeh into small cubes and mixing with 60ml soy sauce, 30 ml maple syrup, 1 tsp paprika and 1 tbsp tomato purée. Fry in oil until crispy (or air fry).
Sun-dried tomato and mozzarella flatbreads
Ingredients 175g/ 3/4 cup thick greek yoghurt 180g/ 1 1/2 cup self-raising flour 6 tsp sun-dried tomato pesto 160g/ 1 1/4 cup grated mozzarella (add more or less for preference) Instructions 1. Pre-heat an oven to 140C/ 280F. 2. In a bowl, combine your flour and yoghurt. Start with a spoon and then use your fingers to bring the dough together. Knead into a ball for a few minutes. Add more flour if you feel it is too wet. 3. Divide into six portions. Then flour or oil a surface and the rolling pin. Place a portion of dough onto the surface and roll out into a thin shape. Add 1 tsp sun-dried tomato pesto and 1/6 mozzarella cheese. Then squeeze the edges together, flip the flatbread over and gently roll the flatbread again. Don’t over roll at this stage just gently roll.
