Lu rou fan, a Taiwanese comfort food classic of braised pork belly over rice, is probably the best recipe to come out of our kitchen this month.

滷肉饭 Braised Pork on Rice | Lu Rou Fan

我相信大家都熟悉台湾著名的民众小吃滷肉饭吧!滷得香香的猪肉淋在白饭上,搭配一些青菜和腌萝卜一起吃,想到都令人垂涎三尺,而且可以吃完一碗接一碗。我一点也没夸张哦,拍好照后,图中的那两碗饭就被我吃得光光了。淋了点滷汁在饭里,味道是超级下饭,我还跟着原食谱视频里鸭妈的吃法,把碗靠在嘴边然后用筷子把饭扒进口里,这种吃法真的是很痛快,几下子功夫就把饭给扒完了! 印象中在一些台湾美食节目里看过滷肉饭里是含有猪皮的,所以我选择了五花肉来滷。五花肉的猪皮千万不要丢弃,猪皮含丰富的胶原蛋白,把猪皮加入一起滷可使滷汁变得浓稠。由于家里厨房还是在装修着,所以只好在晚上将肉滷好,而水煮蛋就在隔天早上加热时才加入,原以为没加入一起滷味道可能没那么好吃,吃午餐时才发觉这水煮蛋变得很入味,浸泡在滷汁里一个早上,所有的味道都渗入进蛋里了。只滷了三十分钟,所以猪肉是蛮有咬劲的,尤其是猪皮部份,咬下去是QQ的。这滷肉饭的味道有点熟悉,感觉像妈妈裹的粽子里的那些肥猪肉,妈妈的猪肉总是加了很多的葱油酥,闻起来特别香。心情烦躁的中午来碗香喷喷的滷肉饭,将所有烦恼都忘掉,开开心心享受我的午餐。…
