1 egg 1 tsp vanilla extract 1 cup applesauce, unswt 1 banana, mashed 1/4 cup honey 2 1/2 cup rolled oats 1 tbsp cinnamon 1 1/2 tsp baking powder 1/2 tsp salt 1 1/4 cup milk Optional: blueberries, chocolate chips, etc Preheat to 350 degrees. Mix eggs, vanilla, applesauce, banana & honey together. Add oats, cinnamon, baking powder, salt Mix well with wet ingredients. Pour in milk & combine. Divide evenly in muffin tin - measure just a tad under 1/4 cup to make 12 servings. Add toppings.
