KALE: High in fiber, immune boosting vitamins A & C, omega-3 and 6 fatty acids to fight arthritis, heart disease, "bad" cholesterol, UV rays & fighting cancer. In large pan, heat 1T olive oil over medium heat. Add 1 clove garlic & cook 1 minute. Add 1 bunch kale (rinsed, dried, stemmed, chopped), 1T lemon juice, 1/2t oregano, 1/2 t red pepper flakes, salt & pepper to taste. Cook 5 - 8 minutes until kale wilts. Garnish with red onion.
