Runebergintorttu - Runeberg's tarts or cakes. A Finnish specialty baked with almonds and cake crumbs, decorated with sugar and raspberry jam... They are supposed to be baked in special straight cups, but an ordinary cupcake pan is fine. It's the taste that matters. You can also bake the dough like brownies, cut into squares and decorate each square with jam eye, like in the picture. These pastries are baked on 5th of February, which is Runeberg's day. Runeberg is Finland's national poet.
