Ingredients:
1 onion and 3 garlic cloves
1 tbsp curry powder
1/2 can coconut milk
1 cup vegetable stock
2 tbsp smooth peanut butter
Juice of 1 large lime
1 tbsp brown sugar
1 tsp miso paste
1 tbsp soy sauce
Salt and pepper to taste
Ramen or soup noodles
Crushed peanuts, chives, chili oil, sesame seeds, crispy onions
Instructions:
Fry minced garlic and onion until browning.
Add curry powder and fry for a few minutes.
Add stock and coconut milk and simmer until thickened and reduced.
In a bowl, mix peanut butter, miso, brown sugar, a splash of hot water, and lime juice.
Combine broth with peanut butter mixture.
Add cooked noodles and top with garnishes
