Healthy Mac N Cheese...using Quinoa  I've been trying to make quinoa more often, but our family doesn't really like it.  I made this tonight, and I loved it!  The family, however... not so much.  But at least I know it's something I can make for myself instead of "the blue box" and still get the taste/texture I love... and not feel hungry again within the hour!
