THE SIMPLE VEGANISTA: Street Tacos, Spanish Fried Quinoa & Black Bean Salad - this looks so good. I'd use ground beef instead of the nuts (since I'm dairy, egg and lately nut, free, not vegan) but otherwise it all looks wonderful!
