Tried- and true! grill the chicken - I seasoned it with salt-free italian seasoning, and at the very end, when the chicken is done but still on the grill, put the mozzarella on. I don't like warm tomato's, so I waited until I was ready to sit down to put the tomato and basil on.  Paired with blackened, grilled brussel sprouts. (asparagus or mixed grilled veggies would also go well with this)
