Nettles are a “perfect food,” containing vitamin A, vitamin B1 (thiamine), B2 (riboflavin), B3 (niacin), B5 (panothenic acid), vitamin C, vitamin D, vitamin E, vitamin K, acetycholine, calcium, chlorophyll, chromium, iron, magnesium, potassium, selenium, serotonin, sulphur and zinc. European cultivated varieties have longer, larger, more tender leaves that don't taste as bitter as wild varieties.  The more sun Dandelions get when growing, the more bitter the taste.
