Raspberry Rhubarb Chia Pudding Cups. I used 1 cup of my homegrown raspberries, 3 or 4 rhubarb stalks, and 3 tablespoons honey for the fruit stew, then added 7 packs of Truvia to the cooled fruit. For the chia mix, I used 1 cup of skim milk with 1 t. almond extract plus the lemon zest and honey. I mixed the fruit and pudding together for a a great low-fat, low-calorie treat. According to MyFitnessPal nutrition calculator, this made 8 servings at 71 calories each.
