Cold dye method for pokeberries. They suggest using white vinegar as a mordant (which I gather helps make it colorfast), mixing that with the mashed berries, and letting it sit in a jar in a dark place for an extended period of time (they did a month). Then the dye material was soaked for a full week to get a very dark, vibrant magenta.
