AMARATH. Edible parts: The whole plant – leaves, roots, stem, seeds. The Amarath seed is small and very nutritious and easy to harvest, the seed grain is used to make flour for baking uses. Roasting the seeds can enhance the flavor, also you can sprout the raw seeds using them in salads, and in sandwiches, etc. Young leaves can be eaten raw or cooked like spinach, sautéed, etc. Fresh or dried pigweed leaves can be used to make tea.

Medeola virginiana ~ Indian Cucumber ~ endangered plant in Florida and in Illinois ~ wild edible root

Florida Habitat: Indian Cucumber Root grows in open woods and forest. For Florida this will be on the cool sides of slopes, 'near' more boggy soil conditions - but not in the wet area. It doesn't like a lot of light, but neither does it like to grow in deep shady woods. Perennial. Other Comments: The tubers (roots) are edible raw. They taste somewhat like cucumber. It's not overly common, so please only harvest only where it is in a stand of plenty, and limit to 1/4 of plants seen.
