Enchiladas - per a review, put chicken (can use frozen breasts/ thighs) in crockpot with taco seasoning, the garlic, onion, & chili powders, chopped onion & a little water in the morning. After work, shred chicken, add the other filling ingredients to the crockpot and stir. Assemble as directed. Can use green sauce instead of red. 15 min prep for the oven and the meat tastes great from simmering all day in the spices.
