A scape is the stalk garlic shoots up to make a flower; these are trimmed to encourage the bulb to grow bigger. Scapes are spicy and crisp when raw but can be chopped and cooked like asparagus. Kohlrabi is a bulbous Brassica with crisp white flesh. You can cook it like a turnip but I always eat them raw, like radishes.
