Smoked Armadillo Eggs Recipe a.k.a  Jalapeno Popper Wrapped and Covered in Sausage .  I don't have a smoker so I'm just baking them in my oven like a basic Baked Scotch Egg (which are amazing, too!)

I adjusted the recipe for a less fussy  version cauliflower cake:  1/2 medium cauliflower, 1/2 medium onion, chopped, 2-3 tbsp olive oil, 1/2 tsp dried rosemary, 3 large eggs, 1 tsp dried basil, 3/4 c flour, 1 3/4 tsp baking powe,r 1/2 tsp turmeric, 1 c grated parmesan cheese, Salt and Pepper--Follow directions for assembly, but pour into a prepared 8x8 baking dish (spray with oil or butter) for 22 minutes @ 350°F.
