Spinach & feta cannelloni - I'd probably veganize this with a tofu ricotta instead of the feta, or possibly vegan feta (tofu w/miso).  I just like the structure - various ingredients wrapped in lasagna sheets, topped with whatever sauce.

Spinach & feta cannelloni - I'd probably veganize this with a tofu ricotta instead of the feta, or possibly vegan feta (tofu w/miso). I just like the structure - various ingredients wrapped in lasagna sheets, topped with whatever sauce.

Wraps filled w/ pulled prok, carrots & cucumber, spring onion and fresh mint rolled in rice paper, glass noodles.   Peanut In a bowl, mix 3 tbsp peanut butter, juice of 1 lime, 2 tbsp soy sauce, 1 tsp sesame oil, 1 clove of garlic, grated, & pinch sugar, a small dollop of rice vinegar & Sriracha or other stuff. Whisk w/a fork until the texture is thick & soft. Taste & add more salt to taste. Until you achieve the tartness, sweetness or savory to your personal taste. Put in the fridge.
