Pay Day Candies (S)  1/4 C Erythritol 2 T butter 1/8 tsp stevia extract 2 T cream 1/8 tsp caramel extract  Melt first two ingredients in a saucepan. Add remaining ingredients, cook until desired caramel color, stirring often.  Take off heat and add:  2 tsp all natural peanut butter Dash of salt  1/2 to ¾ C peanuts  Stir well. Shape into mounds on parchment paper. Makes 16 candies

S Style Cheesy Burritos 1lb beef, cooked and drained Plan approved taco seasoning for 1lb (Gwen's Nest recipe) 16 oz cottage cheese 1 cup shredded cheese 5-6 Low carb tortillas Melted butter or enchilada sauce (optional) Mix cooked beef, taco seasoning, cottage cheese, and shredded cheese together. Spoon into tortillas. Wrap, place seam side down in 9x13 sprayed baking dish. Brush with melted butter or pour enchilada sauce over. Bake covered at 350 for 20 min, then uncover for another 10.
