Homemade Cottage Cheese:  Mix 1 gal milk & 1lt buttermilk in a large pot & let sit covered for 12hrs. After 12hr period, liquid should be thick, do not mix or disturb it at this point. Preheat oven to 250F, & place pot uncovered in the oven for 2.5hrs. When done, recover & cool to room temperature. Cottage cheese should be separated from the whey, strain into a colander lined w/cheese cloth. It can be then refrigerated & eaten or processed in a food processor to yield cream cheese.
