Calabacitas...Verdict:  Success!!! I made this for dinner tonight using the two yellow squash I had on hand, as opposed to the 1 yellow squash and 1 zucchini that the recipe calls for.  I also substituted two TBSP of unsalted butter for the olive oil.  This recipe yields 4 servings at only 139 calories a pop! Serve over a bed of rice and it is super yummy and filling :)
