Tomato and Tofu pickle: Heat 2tb of oil in a wok. Put fenugreek seeds and cook it until its black. Throw in bay leaves and let it fry for 15 sec. Toss in onion & green chilies fry them until its tender. Now pour in tomatoes + all the spices & stir well. Deep fry tofu until it is light brown on other pan with remaining oil. After the tomatoes liquid is reduced to half throw in fried tofu and green peas. Cook for 5 min in low flame. garnish with green coriander cover the pickle for 2 min.
