Local Style Jhol Momo Achar There were many days I remembered the jhol momo from Nepal.

Heat a 2 spoon of ghee on a pan, Fry thinly sliced onion until crisp scoop it out. Fry finely chopped cashews and almond in same ghee until light golden and scoop them out. Heat 3 tablespoon gheen on thick bottom pan, add two pods of cardamom seeds and immediately pour 1 bowl of rice to it. Add fried onion with cashews and almond to it, fry the rice mixture for 10 minutes in medium heat and serve hot. You may add finely diced boiled carrot to rice if available.

The main course in usually comprise of dal-bhaat-tarkari along with non-veg like fish, chicken, beef /buff, pork as preferred and other varieties of.

Tomato and Tofu pickle: Heat 2tb of oil in a wok. Put fenugreek seeds and cook it until its black. Throw in bay leaves and let it fry for 15 sec. Toss in onion & green chilies fry them until its tender. Now pour in tomatoes + all the spices & stir well.   Deep fry tofu until it is light brown on other pan with remaining oil.  After the tomatoes liquid is reduced to half throw in fried tofu and green peas. Cook for 5 min in low flame. garnish with green coriander cover the pickle for 2 min.
