Trick for great Kale Salads. Massage the dressing into the leaves before you add anything else. It will soften the Kale's inherent toughness and take away any bitterness. Also instead of olive oil, which IMHO is just liquid fat, use raw nuts and emulsify in your Vitamix or food processor add water and lemon, lime juice or vinegar some garlic and Viola! A much healthier meal.
