The manual chopper is in my Amazon storefront direct link in my bio. Another winning rolled cookie recipe with all new creative fillings! This seems to be everyone’s favorite cookie, so creamy and delicious and probably the easiest cookie recipe you’ll make. Recipe yields about 60 cookies, trust me it’s not too much. These cookies freeze excellent and have a shelf life of up to a week covered well on counter. For extra freshness, refrigerate. Ingredients: •460 grams - 3 cups all purpose flour •58 grams -1/2 cup powdered sugar •2 sticks -226 grams butter or margarine •1 tbsp. -10 grams baking powder •1/2 cup plus 2 tbsp. orange juice (for allergies, use water) Filling Options are : Lotus cookie butter spread Crushed Biscoff cookies Date spread Chocolate spread Shredded or regular halva Chocolate chips Raspberry jam Finely shredded coconut Crushed walnuts or pecans (skip nuts if there are allergies) Directions: Powdered sugar to dust on top 1. In a large bowl, combine all dough ingredients. Knead until a ball of dough forms. 2. Adjust consistency: If too sticky, add flour (1 tablespoon at a time); if dry, add water (1 to 2 tablespoons). 3. Divide dough into thirds. Roll out one portion on a lightly floured surface into an oval shape. 4. Spread chosen filling evenly on the rolled-out dough. 5. Roll the dough from the closest side into a log shape. 6. Line a baking sheet with parchment paper. Place the log on top. 7. Repeat rolling and filling for the remaining two portions of dough. 8. Using a knife or bench scraper, score the logs into cookies about 1 inch thick. 9. Bake in a preheated oven at 350°F for approximately 30 minutes. 10. Once cookies are completely cooled, generously dust with powdered sugar. Cut through the dough on your previous cuts to ensure no crumbling. 11.
