North African Beef-and-Carrot Stew with Mint. This is probably one of my favorite dishes ever. The scent is intoxicating and flavors are so bold. I add the meat back into the pot right away and let the stew simmer for as long as I can. You can get really creative with this dish and add or substitute many ingredients you have on hand. I serve it with buttered couscous and help myself to two servings. -d.
