The Ramen Shop in Oakland, CA - Opened by some Chez Panisse vets. It's always packed...for good reason!  I LOVE the food here! The MUST-TRY is the Shio Tonkotsu Ramen with chashu, shoyu-marinated egg, black garlic oil, chanterelle mushrooms, scallions & mizuna. The broth is  rich & flavorful from twice-simmering with pig trotters for more than a day. It's like no other ramen broth I've had. Very special & delish! Ramen noodles are made fresh in-house.
