Southwest Quinoa & Kidney Bean Salad with Tomato, Avocado, & Lime

Loaded Potato Salad. 10 red potatoes, chopped and boiled with the skins on. 1C low fat Mayo, 1TBS EVOO, squirt of mustard and relish. 1tsp garlic/parsley mix. S, 1/2C shredded sharp cheddar, one bag of bacon bits (for salads) fried up. 3 homegrown chives cut up with kitchen scissors. DEFINITELY A CROWD PLEASER! ~ JM
