Ingredients
• 8 oz penne pasta, cooked
• 4 cups baby spinach
• 2 cups cherry tomatoes, halved
• 1/2 cup red onion, sliced
• 1/2 cup feta crumbles
• 1/4 cup olive oil
• 3 tbsp red wine vinegar
• 2 cloves minced garlic
• 1/2 tsp oregano
• 1/2 tsp kosher salt
Make the dressing by whisking together the olive oil, red wine vinegar, garlic, kosher salt, and oregano. For the salad tossed together the cooked pasta, spinach, tomatoes, red onion, and feta. Poor on the dressing and toss well to combine.
