Roasted Tomato Pasta with Mozzarella, Basil & Pine Nuts. I subbed spinach in for basil, since I didn't have any on hand (miss my basil garden). Also added cubed lemon pepper chicken breast, lemon zest and fresh lemon juice.
These vegan black bean brownies are not only super fudgy and chocolatey but also gluten-free and really easy to make! Notes: this is seriously yum. Did brown sugar and added blue agave to tweak flavor. Baked for closer to 50 mins.
