This healthy Honey Almond Oatmeal Mug Cake is made with NO flour, butter, or oil, but so soft and fluffy that you'd never be able to tell!

4 Large Carrots (~11.5oz / 326g shredded) 1 and 1/2 cups (120g) Dried (Dessicated) Coconut (plus more for rolling) 1 cup (90g) Coconut Flour 10 Large Medjool Dates (about 1 cup, pitted, loosely packed) 3/4 – 1 cup (180ml to 240ml)  Syrup Transfer half of this mixture to the food processor+ add the dates Mixed well Transfer the mix back to the bowl, dried coconut and coconut flour+mix Add in 3/4 syrup and mix. If it does not, add  1/4 cup of syrup+ mix Roll into balls +freezer
