Flax Meal 4 Eggs 2 t Cinnamon 2 t Baking Soda 1 t Vanilla Optional: 1 c nuts, berries Wrap in foil, Bake at 450 for 1 hr 15 mins., allow to cool completely. Slice in half lengthwise & scoop out insides into bowl. Discard the skins. Mash yams by add the remaining ingredients & blend with mixer until smooth. Spoon batter into lined muffin tins (3/4 full), bake at 375 degree for 35 mins. Makes 18.
