Ingredients:
9 lasagna noodles (cooked)
2 tbsp olive oil
2 cups mushrooms (sliced)
4 cups fresh spinach (chopped)
2 minced garlic cloves
3 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
2 cups Alfredo sauce
1 egg (lightly beaten)
1 tsp Italian seasoning
Salt and pepper to taste
Instructions: Preheat oven to 375°F. Sauté mushrooms and garlic in olive oil until tender. Add spinach and cook until wilted; set aside. In a bowl, mix ricotta, egg, Parmesan, Italian seasoning, salt, and pepper. Spread a layer of Alfredo sauce in a baking dish. Layer cooked noodles, ricotta mixture, sautéed veggies, and mozzarella. Repeat layers, ending with mozzarella on top. Bake for 25-30 minutes or until bubbly and golden. Let cool for 5 minutes before serving.
