1. Dice the onion and mince the garlic. Sauté both in a soup pot with olive oil until soft.
2. Slice the carrots and celery, then add them to the pot. Continue to sauté.
3. Add two split chicken breasts (bone-in), as well as basil, parsley, thyme, pepper, and bay leaf.
