Ingredients:
- •1/2 cup soy sauce
- •1/2 cup pineapple juice
- •1/4 cup cane vinegar
- •2 tsp whole peppercorns
- •3 cloves garlic
- •2 pcs bay leaves
- •1 kg pork loin, cut into cubes
- •3 tbsp canola oil
- •1/2 cup pineapple chunks
- •2 cups water
Instructions:
- •In a bowl, combine soy sauce, pineapple juice, vinegar, peppercorns, garlic, and bay leaves. Marinate pork for 1 hour.
- •In a pot with hot oil, brown the pork and add remaining marinade, pineapple chunks, and water. Bring to a boil and simmer over low heat covered for 45 minutes. Remove the cover and simmer for an additional 10 minutes to reduce the sauce.
