4 ounces cooked rice noodles 1.5 cups shredded carrots 1.5 cups purple cabbage sliced thin 1.5 cups green cabbage sliced thin 1 large red bell pepper sliced thin 1/2 English cucumbers diced 1 cup peanuts 6 scallions sliced thin 2 cups rotisserie chicken, skin removed Dressing: 1/2 cup smooth peanut butter 1/2 lime juiced 1 tbsp rice wine vinegar 1/3 cup orange juice 1 tbsp honey 2 tbsp soy sauce 1/2 shallot 2 tsp sesame oil 1 tsp minced or grated ginger Add all ingredients to a blender and blend
